And though the mix of mousse-like cheese with tea does not sound quite a delight, well, it actually is.
Imagine standing with hundreds of people wrapped around the block, waiting two to three hours for cheese tea. According to Conde Nast Traveler, these lines really do exist. Chinese tea chain HEYTEA reportedly sells about 2,000 to 3,000 cups of cheese tea a day at each of its branches. By removing powdered cheese and swapping it with New Zealand cheese and cream, HEYTEA enhanced the whipped layer, changing the tea game forever.
Now, boba tea cafes are bringing the cheese to the states with a vengeance. First there was Happy Lemon, and now there is LA-based Little Fluffy Head.
“It’s not just cheese and tea,” says Jenny Zheng, founder of Little Fluffy Head, in her video. “You have the tea base at the bottom and then you top it off with cheese cream.”
